This is comfort food at it's finest....
3 or 4 boneless skinless chicken brests--left whole or cut into bite-sized pieces [I cut mine]
fresh mushrooms--sliced
Green Onions--sliced
1 can of Cream of Chicken Soup
1 can of Cream of Mushroom Soup
1 8 oz. carton Sour Cream
1 sleeve Ritz Crackers--crushed
6 Tablespoons Butter
2 Tablespoons Poppy Seeds
Place chicken in a 9 x 13 baking dish and season with salt and pepper
Sautee mushrooms and onions in 2 Tablespoons of the butter until tender
Layer on top of chicken
Mix together mushroom soup, chicken soup, and sour cream
Pour on top of onion/mushroom mixture
Bake at 350 degrees for about 1/2 hour
Mix crushed Ritz crackers, 4 Tablespoons of the butter, and poppy seeds
Sprinkle on top
Bake 1/2 hour longer or until chicken is done.
Serve over rice
